Ingredients
tortilla (28-32 cm)
150 g of Serovia #1 Dutch-type cheese
½ boiled corn (approx. 80 g, optionally canned)
150 g of chicken breast
½ red pepper
chili
lime leaves
sweet pepper
allspice
salt
pepper
parsley leaves
Preparation
Cut the chicken into small cubes.
Cut the corn flakes off the cob and slice. Chop the parsley leaves, remove the cores from the peppers and cut them into large cubes.
Grind the herbs in a mortar. (hint: loose herbs do not need to be ground, but in the case of leaves, only then they will they release their aroma).
Mix the chicken with herbs and vegetables. Complete the whole thing with grated cheese, approx. 150 g. Put the ready mixture on tortillas, knead gently and cover with the second tortilla pie.
Bake in the oven for 12-15 minutes at 200 degrees (convection) (hint: if the top tortilla starts to burn, you can cover it with aluminium foil).
You can prepare a sauce for this dish, e.g. tomato salsa.
